Sometimes when I open other people's MT2 files I notice some samples, when opened, and when directly observing the keyboard, the keyboard has certain keys greyed out and others are highlighted. Then you have a lot of samples within the sample like so:
Choir_C5
Choir_G5
Choir_C5
etc.
Is this multisampling? What purpose does this serve?

I think you could say that that is the practical way to use multisampled instruments. The purpose is precisely that: you can assign a different samples to different notes, thus making the instrument sound more realistic. One example could be that you could make a whole drum set in just one instrument by assigning different samples to different notes.
The disadvantage of this is that all the instrument commands will affect of course all the samples in the instrument and the advantage is the radical reduction in the number of used instrument.
To save the samples individually, open the instrument window, choose a sample and click "save" (the disk icon).
