How do i make a track send to my midi out device ?

You can select the MIDI-out device in the instrument editor, in the synthetizer tab (where you can also choose a VST instrument).
Also, ensure that MIDI is enabled in the 'Edit' menu.
Note that MIDI-out support is far from perfect in this beta.
